Red Cabbage

Cabbage red pigment is a food colorant extracted from the cruciferous plant cabbage (Brassica oleracea var. capitata L., also known as red cabbage).

This pigment is a mixture of several anthocyanins and also contains flavonoids and tannins. The product appears as a purple-red liquid or powder, easily soluble in water and aqueous ethanol solutions,

but insoluble in fats and anhydrous ethanol. Its hue and stability are affected by pH: it appears as a stable red or purple-red in acidic conditions; blue in neutral conditions;

and an unstable green in alkaline conditions. It is suitable for coloring formulated wines, carbonated beverages, fruit juice (flavored) beverages, jams, candies, etc.
